A great make ahead salad--linguine, peas, onions and bean sprouts with a dressing of soy sauce and rice wine vinegar.
Bring a large pot of water to a boil and cook linguine according to package directions. Turn off heat when linguine is just tender and add frozen peas and bean sprouts. Let sit for 5 minutes then drain well. In a serving bowl combine remaining ingredients and add linguine mixture. Toss well to coat all ingredients with dressing. Chill for 1 hour to overnight. Serve as a side dish with teriyaki chicken or soy glazed salmon.
Notes:
This dish goes well with Asian style grilled meats, fish or poultry. It is a delightful mix of flavors and colors and can be made ahead.
