A salad that's as easy as A, B, C. This bean salad combines onion, bell peppers, cucumbers, tomatoes, greens and chicken.
Ingredients:
- A:
- 1 can black beans, rinsed
- 1 cup garbanzo beans, rinsed
- 1/2 cup diced purple (or red) onion
- 1/2 cup each diced yellow and orange bell peppers
- 1/2 cup diced English cucumber
- 1 or 2 diced tomatoes
- 1 cup Arugula
- 1 cup baby spinach
- 1 large can of chicken breast meat, broken up (Trader Joe's or Kirkland brand is best)
- B:
- 1/4 cup mayonnaise
- 1/4 cup plain yogurt
- 1/2 teaspoon toasted sesame oil (or more to taste)
- Juice from one lemon (about 3 Tbsp)
- 1/2 teaspoon sugar
- Big pinch of salt
- Handful of chopped cilantro
- C:
- Sesame seeds
- Chopped cilantro
Method
Mix together "A" ingredients. Add "B" ingredients. Top with "C" ingredients.
Notes:
Ingredients can vary according to preference and whatever you have in your fridge that day!
Number of servings: 4 or 5 for main dish; 8 to 10 for side dish
